Delicate dishes of Armenian national cuisine are served in the restaurant. The chief-cook of the restaurant, Serdak Mamulyan, is the president of public organization for “Development and preservation of Armenian culinary traditions”. He thinks that culinary is something more than the skill of food preparation: “The cook is a keeper of national traditions. He is responsible for the mood, feelings, working ability as well as world view of his nationals. I am sure, that people who eat carelessly, are not able to create a great culture”.
The main goal of the public organization is the collection of recipes from regions of Armenia. This process is coordinated by the board of senior cooks and group of ethnographers. The organization members along with specialized educational institutions, which train cooks, participate in the development of educational programs.
